Chunky guacamole
Ingredients
3 ripe avocados
2 roma tomatoes (I like roma because they have fewer seeds, but any tomato will do. You may want to remove some of the seeds if your tomato is really juicy).
ΒΌ sweet onion
Juice of one fresh lemon
Dash of hot sauce - use your favourite brand
Fresh ground salt and pepper
Steps
Slice avocado in half and remove pit. Spoon out flesh in large chunks.
Cut lemon in half and squeeze juice over the avocado so it doesn't turn brown.
Dice tomato and onion and add to the avocado.
Add a dash of hot sauce and fresh ground salt and pepper.
To mix, use your knife to cut through the avocado so it remains chunky. Gently toss with a spoon.
Make sure you taste it to see if it requires more seasoning.
It is of course great with tacos and burritos, but I also like it as a dressing. Try it over a bed of your favourite greens.
