Baked apple cinnamon oatmeal
Yields 6 large servings
Ingredients
3 cups oats
4 cups boiling water
1 banana – one mashed
2 apples –1 ½ apples large dice and ½ apple thinly sliced for top (I use a mandoline)
½ cup raisins
½ cup sunflower seeds [i]
½ cup almond milk
2 tablespoons maple syrup
2 ½ tablespoons- palm sugar – reserve ½ tablespoon to sprinkle on top
2 ½ teaspoons cinnamon – reserve ½ teaspoon to sprinkle on top
½ teaspoon Himalayan or sea salt
Steps
Preheat the oven to 350 degrees F.
Combine oats and boiling water in a medium size mixing bowl. Let the mixture stand for about 10 minutes - until the water is absorbed by the oats.
Add the mashed banana, cubed apple, maple syrup, sunflower seeds, raisins, almond milk, 2 tablespoons of palm sugar, 2 teaspoons cinnamon and salt.
Pour into a 9 by 9 baking dish. Lay sliced apples on top and sprinkle with remaining palm sugar and cinnamon.
Bake for 20 minutes. Put under broiler for 5 minutes. Serve warm.

[i] I soak all my nuts and seeds. It removes the enzyme inhibitors making them easier to digest. Sunflower seeds take about 6 hours in the dehydrator. They can be stored in an airtight container for three months. I usually make large batches, so I have them on hand for snacking or recipes.
