Shaved fennel salad
Yields 4 servings
Ingredients
1 fennel bulb – thinly sliced
1 lemon - juiced
¼ teaspoon Himalayan or sea salt
⅛ teaspoon freshly ground black pepper
Step
Thinly slice fennel using a mandolin or food processor. Include the tops in the salad. It provides added texture and flavour.
Squeeze the juice of one lemon on the shaved fennel. Toss with salt and pepper.
Serve at room temperature or slightly chilled. The salad holds up well, so it can be dressed in advance of serving.
