Crispy garlic (oil-free)
Crispy garlic (oil-free)
This adds a crispy of punch flavour to your dish. It is also a good preservation method. The garlic can be stored in an airtight container for months and if you want a finer texture you can grind the flakes.
Yields: ½ cup
Ingredient
20 – 25 cloves
Steps
Peel the fresh garlic. Grate each clove. Place the grated garlic on one half of a piece of parchment paper cut to fit your dehydrator tray. To keep the garlic from blowing off the sheet in the dehydrator, fold the sheet over the garlic. Place the folded edge facing the fan at the back of the dehydrator. This technique works well for drying any herbs.
When it is completely dry, store it in an airtight container. It will last for months. I live in a very humid climate, so I also use desiccant bags to keep the moisture content low in all my dehydrated items.
