Tzatziki
This is the perfect summer dip. The flavours are bright and it is really creamy, especially when you use homemade cashew sour cream.
Yields: ¾ cup
Ingredients
⅓ cup plant-based sour cream or plain yogurt
¼ cup unpeeled cucumber – grated and drained
2 teaspoons lemon
½ teaspoon garlic powder
¼ teaspoon salt
Steps
Grate the cucumber and let it sit in a colander to drain for 5 minutes, then use your hands to squeeze out the remaining moisture. Combine the cucumbers, sour cream, salt, and lemon. Taste, then adjust seasoning as needed.
