Fruit scraps vinegar

My husband and I volunteer for a local fruit save program, so I am fortunate to have access to a wide variety of fruit throughout the summer and fall. I do my best to minimize waste, so this simple vinegar made from fruit scraps is perfect. If you don’t mind dealing with fruit flies, then I recommend you give this a try.

Yields: 2 litres

Ingredient

8 cups apple (include skin, cores, and seeds)

½ cup cane sugar

½ cup living vinegar

Non-chlorinated water (enough to cover the fruit)

Steps

In a large glass measuring cup mix the sugar, vinegar and 1 cup of water. Stir until the sugar is dissolved.

In a large jar place the fruit scraps and sugar mixture. Add additional water to ensure all the fruit is covered. The fruit needs to be submerged to avoid bad bacteria growth. Place a weight on top of the fruit and a dish under the jar to capture any spillage. Cover with a tightly woven tea cloth and secure well with an elastic to keep fruit flies out. Leave the jar in a warm dark spot for 1 week.

Use a strainer over a large bowl to separate the fruit from vinegar. Taste. It should taste like a sweet vinegar at this stage. Pour the liquid back in the jar and cover it again with the tea cloth. Let it sit for a couple more weeks. When you get the flavour you like. Strain it one more time. Put a lid on the jar, store in the cupboard and enjoy.
