Frozen fruit tart
These make an easy and delicious summer dessert. I make them in a silicone muffin tray, so it is easy to pull a single serving out of the fridge when I am looking for a cold treat.
Yields: 6 servings
Ingredients
Base
½ cup dates
½ cup sunflower seeds
2 tablespoons cacao
1 tablespoon coconut oil (solid)
¼ teaspoon salt
Ice cream
2 cups frozen fruit
⅓ to ½ cup coconut milk – amount depends on the type of fruit
2 teaspoons lemon or lime juice
Steps
In a food processor, combine all the base ingredients. Mix until you can make it into a ball. In a muffin tin, press into each tin. Put it in the freezer while you make the ice cream.
In a high-speed blender, blend the fruit, add the coconut milk needed to make it creamy and smooth. Scoop it into the muffin tin and put back in the freezer until you are ready to serve.
