Overnight chocolate oats

This oatmeal is dessert worthy – it is sweet, creamy and oh so chocolatey

Yields: 4 servings

Ingredients

2 cups nut milk  

2 cups rolled oats

½ cup pitted dates

¼ cup raw cacao

¼ teaspoon salt

Toppings – add some tartness and texture for balance

Sliced fruit such as mango, pineapple, banana or any berry

Chunky peanut butter

Coconut flakes

Cacao nibs

Chopped nuts

Steps

In a high-speed blender combine nut milk, dates and cacao. This ratio of dates, to cacao, to milk is sweet and chocolatey, that is why I say it is like a dessert. If you are eating it for breakfast, you may not want it this sweet, so start with ½ cup of dates, taste it before adding the additional ¼ cup.

In a bowl, pour milk mixture over the oats. You can cover it, or spoon it into smaller serving size dishes. Refrigerate for 4 to 6 hours. Just before serving, top the oats with your toppings of choice. For kids it would be fun to let them top their own.
