Chocolate nut butter balls

This is my go-to sweet treat after a meal. The flavour reminds me of a peanut butter cup, but it is a lot healthier. There is no refined sugar and I use raw cacao to get the full benefits of chocolate.

Yields: 12-14 balls

Ingredients

1 cup almonds - soaked and dehydrated [i]

½ cup dates – pitted

¼ cup raw cacao

¼ cup nut butter (I like salt-free natural peanut butter)

1 tablespoon coconut oil

½ teaspoon vanilla

¼ teaspoon salt

Steps

Pulse almonds using a food processor with the S blade. When the almonds are a fine meal, add the dates. Pulse until it is mixed well. Add the remaining ingredients. Mix until it forms a dough that can be formed into balls.

Form the balls in the palm of your hands. I use about a tablespoon per ball. Place them on a cookie sheet to freeze. When they are solid, place in an airtight container in the freezer.

They will last a few months.

[i] This step is not required, but I soak all my nuts and seeds. It removes the enzyme inhibitors making them easier to digest. The nuts are then dehydrated for 16 to 20 hours, until they snap or crunch to the bite. They can be stored in an airtight container for three months. I usually make large batches, so I have them on hand for snacking or recipes.
