Probiotic green smoothie

When you continuously brew kombucha or water kefir there are times when you have more than you can drink. So instead of flavouring and bottling every batch, I use the first ferment in smoothies, dressings or as a culture for other ferments, such as cashew cheese. It is a no waste approach that adds another source of probiotics to your diet.

Yields: 2 servings

Ingredients

1 large handful kale or spinach – leaves and stems

2 cups fruit – lately I have been using a frozen mix with strawberry, peaches, pineapple and banana

1 cup kombucha or water kefir (first ferment)

½ cup white grape juice – fresh or frozen

Steps

You can use fresh or frozen kale or spinach. Whenever I have excess hearty greens, I freeze them for smoothies or soups. I hate wasting food.

I like to use frozen fruit because it gives the smoothies a thicker consistency. It is also more affordable.

Put all the ingredients in a blender. Blend and enjoy as a drink or in a smoothie bowl.
