Kombucha dressing
Yields 2 ¼ cups
Ingredients
1 ½ cups kombucha starter liquid [i]
½ cup olive oil
⅓ cup apple cider vinegar
2 tablespoons maple syrup
2 tablespoons hot mustard [ii]
1 ½ tablespoons onion – minced
1 teaspoon garlic powder
2 teaspoons psyllium - optional
½ teaspoon salt
¼ teaspoon pepper
Steps
Combine all the ingredients in a deep container so it can be mixed well. I like to use an immersion blender. Pour into a glass bottle with a tight-fitting lid.
This fermented dressing can be stored in the fridge for a few weeks. To help thicken the dressing, you can add 2 teaspoons of psyllium.
[i] I used the liquid from restarting my dehydrated kombucha SCOBY. It isn’t very pleasant to drink because it has a stronger vinegar taste, but is great for making a dressing. The liquid from a batch of over-fermented kombucha can also be used in this dressing.
[ii] I used my homemade mustard, which is quite spicy. If you use a store-bought Dijon, use an extra tablespoon.
