Strawberry hibiscus popsicle

On a hot summer day, I love a cool treat, but don’t want a lot of extra calories. These popsicles deliver. They are light and refreshing.

Yields: 8 popsicles

Ingredient

4 cups frozen strawberries

1 to 1 ¼ cups hibiscus tea

⅓ cup coconut milk (fat only), plant-based yogurt or plant-based sour cream

2 tablespoons powdered cane sugar

Steps

Make the hibiscus tea. Let it cool completely.

Put 1 cup of the cooled tea, strawberries, coconut milk and powdered sugar in a high-speed blender. I use powdered sugar because it dissolves easily. Blend the ingredients until smooth and pourable. Add the additional tea as needed to get the consistency you like.

Pour the mixture into popsicle molds. Add the sticks. Freeze for 4 to 6 hours. To help remove them from the molds, dip them in warm water. Enjoy.
