Cosmic cookies
When I lived in Edmonton, Planet Organic was a regular Saturday stop for me after the Old Strathcona Farmers Market. The grocery store is now closed, but I kept a copy of their recipe for Cosmic cookies. I made a few minor tweak to make them a little healthier, but they still have all the flavour.
Yields: 26-28 cookies
Ingredients
2 ¼ cups regular oats
2 cups spelt flour
1 ¾ cups chocolate chips (plant-based)
1 ¼ cup raisins
1 cup sunflower seeds
¾ cup and 2 tablespoons pumpkin seeds
½ cup coconut – shredded and unsweetened
¼ cup flax seeds
1 cup cane sugar
¾ cup canola oil
1 cup plant-based milk
2 ¼ teaspoons pink salt
¼ cup water
¼ cup blackstrap molasses
Steps
Preheat the oven to 350 F.
Combine all the dry ingredients in one bowl. In another bowl, mix all the wet ingredients. Add the wet to the dry. Mix until just combined.
Portion the cookie dough using a ¼ cup scoop. Place the cookies on a lined baking sheet. Gently flatten the cookies with the heal of your hand and bake for 24 minutes, until lightly browned.
Let them cool a few minutes on the cookie sheet before moving them to a cooling rack. Store them in an airtight container. They also freeze well.
