Everyday chocolate cake

This cake is similar in texture to a muffin or loaf. Grab a slice any time of day. If you want to jazz it up and serve it as a dessert, just drizzle some chocolate sauce over a slice and garnish it with berries. It stores well on the counter in an airtight container. It stays moist for several days, but it never lasts that long.

Yields: 1 loaf

Ingredients

1 ½ cups sprouted spelt flour

¼ cup raw cacao

1 cup coconut sugar

1 teaspoon baking soda

½ teaspoon salt

⅓ cup apple sauce

⅓ cup strong coffee

1 teaspoon vanilla

1 teaspoon white vinegar

1 cup water

Steps

Preheat oven to 350 F.

Line a loaf pan with parchment paper. Wet the parchment paper a bit and crunch it together to soften it. It makes it easier to line the loaf pan.

In a bowl, mix dry ingredients together except the sugar. In a separate bowl, cream the sugar and apple sauce then add the remaining wet ingredients. Add the wet to the dry. Mix until the batter is lump free.

Pour the batter into the loaf pan. Bake for 50 - 55 minutes. Check it with a toothpick. If it comes out clean it is ready.

Remove it from the oven. Cool it in the pan for 5 minutes before gently transferring it to a cooling rack.

Serve each slice with a good drizzle of chocolate sauce.
