Nigella inspired power squares

Ingredients

2 cups of dates

2 cups of purified water (enough to cover the dates)

3 cups rolled oats

1 cup raisins

1/2 cup pumpkin seeds

1/2 cup sunflower seeds

1/2 cup goji berries

1/2 cup unsweetened non-sulfate coconut

1/4 cup chia seeds

1/2 cup flax seeds

1/2 tsp. sea salt

Steps

Preheat oven to 350F. Line a square baking dish with parchment.

Put dates in sauce pan and cover with water. Bring water to a boil then reduce it to simmer. Cook dates until most of the water is absorbed and the dates can be mashed with a fork.

Combine all the dry ingredients into a large bowl

Add the soft dates to the dry ingredients and mix well.

Pour into baking dish and press down. Bake for 30 minutes or until edges start to turn golden brown. Remove from pan and place on a cooling rack. When cooled, cut into bars. They freeze well.

Feel free to change up the dry ingredients. Think about texture and taste. Cocoa nibs, cranberries and hemp seeds are all options.
