Eggs are binders and leavening agents in recipes. Aquafaba is probably the best at leavening, it can actually be whipped into a meringue. Flax and chia are good binders when you don’t want to add any additional flavour. Both are best freshly ground for texture and nutrition. Bananas and apple also play a role as a sweetener.
Aquafaba – 3 tablespoons chickpea liquid = 1 egg
Flax - 1 tablespoon flax meal and 3 tablespoons of water = 1 egg
Chia - 1 tablespoon chia and 3 tablespoons of water = 1 egg
Unsweetened applesauce - ¼ cup = 1 egg
Banana - ¼ cup = 1 egg
Silken tofu - ¼ cup = 1 egg
Powdered egg replacer - follow the directions on the package
