Foraging for sea asparagus (sea beans)

Sea asparagus is found all along the shores of my new home, Vancouver Island. If you don’t live on the west coast, don’t fret. Sea asparagus is also available at some farmers markets. When I lived in Edmonton I bought it from a wild mushroom vendor at the downtown market.

Sea asparagus is a wild vegetable with a great crunch and tastes like the sea. It also has pretty good nutritional value.

You can eat it raw, boiled, sautéed or pickled. Since it is so plentiful and I love foraging, I have been trying it in a few different recipes.
