Mint tea

I have a gorgeous mojito mint plant growing in my yard. I potted it up this year and it is saying thank you by thriving. I use mint in recipes and often just steep it in hot water and enjoy it warm or cold.

Yields: 1 litre

Ingredients

Fresh mint – two large sprigs (leave stem on)

Boiling water – 1 litre

Steps

Put mint in a large glass jar. Pour in boiling water. Let it steep at least 5 minutes. If I am making cold tea, I let it steep more, usually a couple of hours on the counter top. Remove the mint, cover the jar and put in fridge.

The tea is a nice alternative to just water on a warm day. Mint also has health benefits – it helps with digestion.
