Mint cilantro sauce

This year my herbs are doing really well, so I wanted to make sure I used them in their prime. This sauce allows the herbs to shine and adds brightness to anything you pair with it.

Yields: ½ cup

Ingredients

½ cup fresh mint – leaves and tender stems

½ cup cilantro - leaves and tender stems

1 teaspoon garlic powder or 1 clove

1 tablespoon jalapeno – minced

2 tablespoons lemon juice

1 teaspoon lemon rind or lemon powder

2 tablespoons canned coconut milk – solids only

¼ cup water or liquid from the coconut milk

½ teaspoon pink salt

¼ teaspoon black pepper

Step

Put all the ingredients in a blender. Blend to the consistency you desire. It is a great sauce for a variety of Indian inspired dishes. Try it with roasted spiced vegetables, chickpea masala, or curry wraps along with or instead of a fruit chutney.
