Chocolate chip oatmeal cookies

Here is a vegan twist on a classic cookie. Adding the banana to the recipe allows you to reduce the oil and the orange juice tames the banana flavour a bit.

Update 2023 – I have reduced the sugar by ¼ cup and reduced the size of cookies. They are still as satisfying as ever.

Yields: 30 cookies

Ingredients

cup ripe banana – mashed

2 tablespoons solid coconut oil

1 cup coconut sugar

2 flax eggs (2 tablespoons ground flax and 6 tablespoons water)

¼ cup orange concentrate (don’t add water)

1 teaspoon pure vanilla extract

1 cup sprouted spelt flour

¼ teaspoon baking soda

⅛ teaspoon salt

3 cups rolled oats

1 cup chocolate chips (plant-based)

Steps

Preheat the oven to 350 F. Line baking sheets with a silicon mat or parchment.

Cream the coconut oil with the sugar. Add the banana, orange juice, flax eggs and vanilla and mix well.

In another bowl, mix together the salt, baking soda and flour. Stir into the wet ingredients. Add the rolled oats and chocolate chips.

Use about 2 tablespoons of batter for each cookie. Gently flatten them with the heal of your hand.

Bake for 20 minutes, until the edges start to brown. Let the cookies cool on the cookie sheet for about 5 minutes before moving them to the cooling rack.
