Chocolate spice banana bread
Yields 1 regular loaf or 3 mini loaves
Ingredients
3 ripe bananas - mashed
1 ½ cups oat flour [i]
⅓ cup maple syrup
½ cup chocolate chunks or chips (70% cacao or higher)
¼ cup aquafaba (liquid from canned chickpeas) [ii]
1 ½ tablespoons sunflower or canola oil
2 teaspoons baking powder
¾ teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon freshly ground nutmeg
1 teaspoon vanilla
½ teaspoon Himalayan or sea salt
Steps
Preheat oven to 350 degrees F. Oil loaf pans.
Whip the aquafaba until it froths. Mix the remaining wet ingredients in one bowl. Add the aquafaba and the chocolate chunks. In a separate bowl, combine dry ingredients and mix well. Slowly add dry ingredients to wet and fold together.
Pour the mixture into loaf pans. Bake for 45 to 50 minutes. They are done when a tooth pick comes out clean.
Cool 10 minutes before removing them from the pan. Continue to cool the loaves on a rack. Don’t slice before they are cooled or you risk the slices breaking apart, especially if you used chocolate chunks.
[i] Make your own oat four using your Vitamix. 2 cups of oats ground equal 1 ½ cups of flour.
[ii] You can also use a flax or chia egg. The general rule for using chia seeds or flax seeds as an egg substitute is: 1 tablespoon of chia or ground flax to 3 tablespoons water = one egg.
