Shaved baked tofu
I like experimenting with different ways to cook tofu. These marinated slices have a nice meaty texture. They taste good on their own or dipped in your favorite sauce. I like them in my lemongrass sub or with Korean chili dip.
Yields: 4 servings
Ingredients
1 block organic extra-firm tofu
Marinade
1 cup vegetable broth
1 tablespoon dark miso
1 teaspoon vegan Worcestershire sauce
Steps
Drain and press tofu for a few hours.
Combine the vegetable broth, miso and Worcestershire sauce. Pour it into a shallow baking dish.
Use a vegetable peeler or mandolin to thinly slice the block of tofu. Place it in the marinade. Let it sit for a at least a couple hours.
Preheat the oven to 400 F.
Line a baking sheet with parchment paper or a silicon baking sheet. Lay the marinated slices of tofu on the sheet. Place in the oven and bake until the sides start to get crispy.
