Garlic mash potatoes

Yields: 4 servings

Ingredients

4 cups red potatoes – rough chop with skin on

1 smaller head of garlic - roasted

½ cup warm vegetable broth

¼ cup of cashew sour cream

1 teaspoon Himalayan salt

⅛ teaspoon pepper

Steps

Preheat oven to 375 F. Roast head of garlic until it is soft and creamy.

Bring a pot of well-salted water to a boil. Add potatoes which have been washed and chopped into equal size pieces. Let the potatoes simmer until they are fork tender. When they are done, pour them into a colander to drain. Return the potatoes to the pot to mash. I use a hand-masher. Add half the vegetable broth, garlic (cut the end off the bulb and squeeze out the roasted garlic), salt and pepper. Add the remaining broth until you get the consistency you like. Fold in sour cream. Taste – add additional salt if needed.

Pair with the miso gravy for a satisfying side dish.
