Fruit sauce

Yields: 4 cups

Ingredients

10 cups of pitted plums (or any stone fruit or berry)

ΒΌ cup lemon juice

1 teaspoon agar agar

Steps

Combine fruit and lemon juice in a large pot. Bring mixture to a light boil then turn down to a simmer. Let the fruit juices release and the skin break down. When it is a consistency you like, remove it from the heat, puree the mixture using an immersion blender. Stir in 1 teaspoon of agar agar.

When it has cooled, pour it into a mason jar and seal. It can be kept for two weeks in the fridge. It also freezes well. The sauce can be turned into a savory or sweet treat, such as plum chia parfait.
